If only I could give Chase's 6 stars! First the owner Chase and the bar tender (Doug, I think) were terrific. Friendly, helpful, and great service. My wife and I started with the baked Brie it came with bread, sliced apple and two sauces a bacon jam and a blackberry sauce. The bacon jam should be illegal it was so good. I love Cesar salads and the one at Chase's was one of the best I've had. My wife had the Bourbon Bird (nightly special) which was amazing. The sauce on it was delicious. I had the fish and chips. The chips were perfectly cooked, the batter on the fish was light and crispy , and the fish was delicate and flaky. Perfect fish and chips. We tried several cocktails all were excellent. The Story Of The Ghost had a hint of spice and a little heat. Very good. The Deer Season was a delicious take on an old fashioned. We tried a specialty cocktail called the Phat Matt that was crazy good. It had a smoked brisket fat washed averna (liqueur). I don't know who thought up this drink but it was pure genius. Chase's is pretty small inside but the ambience is very warm and comfortable. This is not an inexpensive place, but it is worth the price of admission.

Excellent experience! Small dining space so make a reservation. Samuel (Sam) was our server and he absolutely crushed it - give this man a raise! Cocktails were great - Helotes with Fritos was actually pretty light and flavorful - Caesar salad was great - Asian ribs were just ok / a bit dry. Overall really enjoyed dinner!
As you can imagine Chases was as good as the hype but definitely pricey for Fredericksburg. We got one entree and two apps and two drinks and it was $100 with tip. We sat at the bar and had great service. We're mostly vegetarians so we picked around the menu (which does update frequently). We got the zucchini bites, potato scoops and street shrimp tacos! The potatoes were enough for 4+ folks to split as an app or side and they were perfectly seasoned and mix between potato skin and steak fry with some crispy bits. For $10 the best value on the menu and we'd get those again! The Zucchini was a smaller, more tapas sized serving - but the batter was great! The set of 3 street style tacos were good and had a little zing. For the price I would have skipped thou for next time ($19). We got two cocktails; a peach one and the gin (Taylor's fave) drink, which was our favorite of the two. Again for the price, I'm not sure we'd do them again...and we live in Austin, the King of overpriced cocktails. We would try Chase's again but maybe just to split an app and one cocktail. Recommend getting a reservation online too!
This is such a cute little place! The owner was walking around chatting with everyone and was so friendly. The other staff were extremely friendly as well. Our food was incredible! Especially the street tacos! This place has very limited seating, so make sure to grab your reservation in advance!
